This is the finest Cabernet in their portfolio, with only 3000 bottles produced. Made from low-yielding fruit from two vineyards – one in the warmer Leasingham district and the other in the cooler, more elevated Skillogallee Valley. The grapes are hand-picked at optimum levels of ripeness which maximises the inherent cassis and tobacco leaf characters of the variety. Gently crushed and fermented on skins until dryness using selected cultured yeasts. Once dry, each batch is basket pressed into a selection of new and one year old French oak hogsheads and allowed to matured for 18 months. The final composition is bottled without fining or filtration. An inky red wine with crimson highlights. On the nose fresh red berries, ripe blackcurrants , and hints of mint all meld seamlessly together, seductively supported by classy French oak spices. The textured palate is taunt and linear with flavours of cassis and tobacco leaf coming through with nuances of liquorice and vibrant red berries all superbly combined with fine tannins and balanced acidity. This is a Reserve wine made for ageing, and will happily cellar for at least 15 years.
