The grapes were sourced from the St. Andrews, and Pewsey Vale vineyards: whole berry pressed to protect the pure fruit flavours and prevent extraction of harsh phenolic characteristics. The juice was chilled quickly and, like the St. Andrews Chardonnay, the whole process took place within 15 minutes of harvest. Cold settled for 24 hours before racked off the lees and undergoing a cool fermentation in stainless steel using a relatively neutral yeast strain, again to preserve the classic varietal features of the Riesling. Fermented to a natural level of dryness, then minimal fining and filtration prior to bottling. This hedonistic, tightly focused wine pairs beautifully with simply cooked white fish and is also a brilliant match for sushi.
