From grapes of the cool climate Adelaide hills, picked at night to preserve natural acidity and immediately transported to the winery where they were quickly de-stemmed and cold soaked for 3 days to maximise the varietal fruit. Following fermentation in stainless steel, the grapes were gently pressed, transferred to tanks and allowed to settle before undergoing the malolactic fermentation, then matured in a combination of 1 and 2 year old French oak hogsheads prior to fining, filtering and bottling. This bright and vibrant wine is light to medium garnet in colour. The nose has lifted aromas of cherry, plum and strawberry with restrained notes of spice and cedar. This is a medium-bodied wine with flavours of ripe cherries combined with a subtle savouriness and hints of cinnamon and cedar from the French oak ageing. A fruit driven pinot noir with a sublimely soft and silky texture and an elegant finish. Can be enjoyed on release but will happily cellar until at least 2020. A classic match for roast turkey with all the trimmings, but also good with Italian antipasti, and duck p?t?s
