The majority of the fruit was sourced from the Lodden and St. Andrews [with its famous Terra Rosa soils] blocks on the Taylor family estate in the Clare Valley. Following de-stemming, the grapes underwent a quick, warm fermentation in stainless steel. After the primary fermentation the fruit was pressed and transferred back to stainless steel where the secondary malolactic fermentation took place. The wine was then racked off to a mixture of American and French oak barrels, 50% 1 year old, and 50% 2-3 three years old and left to mature before blending and bottling with minimum filtration. This vibrant red wine has intense purplish highlights, with lifted aromas of raspberry, cherry, violets and enticing vanilla and cinnamon. The palate has layers of ripe, dark fruit alongside rich fruitcake and dark chocolate, coffee bean, subtle spice and vanilla characteristics from the oak maturation. Soft, velvety tannins and an elegant finish complete the picture. Can be enjoyed on release, but will reward careful cellaring for at least 5 years. Try it with Italian cuisine like lasagne and pastas, tomato based dishes, Irish stew and lamb and beef curries.
