This wine is very special because they only make it in years when the conditions are right for producing botrytis cinerea – noble rot. The grapes are handpicked from the Lo Ovalle sector of Casablanca’s El Ensueno vineyards, where the fruit affected by the botrytis is individually selected. At the winery the fruit is basket pressed before fermentation in used French oak barrels. The wine spends a minimum of eight months maturing in barrel, finishing with at least a further two months in bottle prior top release. This bright, gleaming golden wine, displays a nose of quince, papaya, jasmine and vanilla from the oak aging. The palate is filled with exotic crystallised fruits and honey. This is a silky complex wine that is an amazing match with all manner of fruit desserts, but also pairs well with pate and blue cheese – especially Roquefort. And if you do not feel like a desert – it’s delicious on its own to round off a meal.
