Grapes from the Clare Valley on the Taylor family estate, and from a grower partner in the Adelaide Hills, all picked in the cool of the night to ensure retention of the delicate flavours. Quickly chilled, then whole berry pressed. Following a short settling period the majority of the juice was filled to French oak barriques for fermentation – 10% new, 20% I year old and the remainder 2 and 3 years old. A small portion of the juice was fermented in stainless steel and all parcels were lees stirred for 4 months during fermentation ? this gives creaminess to the finished wine. Finally blended, stabilised and filtered in stainless steel prior to bottling. An extremely versatile wine – lovely with roast turkey, chicken, pork, scallops, and practically anything in a creamy sauce
